How to Make Rasmalai at Home

 1: Prepare the Chhena

Heat 1 liter of milk in a heavy-bottomed saucepan to a boil over medium heat. Add milk and stirring occasionally to avoid sticking.

Once all the heat reaches the milk, turn it off and let milk stand for about 1 minute. Add the lemon juice or vinegar solution to the water, drop by drop with stirring. The milk will split into white curds and pale greenish whey. Add a small amount of more dilute lemon juice if necessary until separation is complete.

2. Drain and rinse.

Pour the milk through a strainer that is covered with a clean muslin cloth. Wash away with cool water the sour taste from the chhena. Collect and wring out the cloth. Let it hang for about 30-45 minutes until the chhena is moist but not dripping wet. Don’t make it too dry or it may impact the texture of rasmalai.

3. Knead and shape the balls.

Remove the chhena to another clean plate. Using your palm, knead it for about 8-10 mins until smooth and soft. Break into 6 – 8 even-sized portions, as desired. Form into smooth balls then slightly platten each one into a small disc. Ensure that there are no cracks visible on the surface.

4: Cook the Chhena Discs

To a wide saucepan, add 1 cup of sugar and 4 cups of water. Bring to heat until sugar is melted and syrup is boiling.

Place the chhena discs on this carefully, ensuring there is a gap for expansion. Cover the pan and let it cook on medium-high heat for about 15-20 minutes.

These discs will expand when cooked. Do not stir them violently; they may crumble apart.

After cooking, remove from heat and let them warm up a little in syrup. Carefully lift the discs off and squeeze every disc slightly between 2 spoons or use a clean spatula to remove some of the syrup. Gently handle to maintain shape.

 5: Make the Flavored Milk.

Add 1 liter of milk in another heavy bottomed saucepan. Boil it softly, and then lower the fire. Add the sugar, pulverized cardamom and saffron strands (where applicable).

Bake 15-20 minutes, stirring often to avoid sticking or burning of the milk. Let the milk cool down a bit to the point where it is creamy and yet can be poured.

Add the chopped almonds and pistachios, but keep a few aside to decorate. Sample the milk and add sugar as needed.

6: Mix all the Rasmalai together.

Put in cooked chhena discs into warm flavored milk. Place a bit of milk on top of each cheese slice to soak it in. Cook for an additional 2-3 minutes – low heat, then reduce heat.

Adding the discs, do not boil vigorously so that the shape of the discs is not lost. After rasmalai is cooked, put in a covered container once cooled.

7.Put into the fridge and serve.

Set out the rasmalai in the refrigerator, for at least 2-3 hours. The chhena disks are chilled, which makes the flavored milk soak into them, and makes them taste more delicious.

Drizzle with the chopped nuts and add saffron strands, if using, just before serving. Your own rasmalai is now ready to enjoy!

Do not over-sweeten milk – the flavored milk absorbs sugar syrup but if too much sugar is added, the milk can end up being over-sweet.

Let the chilling time: Rasmalai tastes particularly well if it can be cooled in the fridge.

Some frequent errors include:

Hardness of rasmalai can be the result of insufficient kneading or dry chhena. If the disc breaks in the process then either it is cracked or the chhena combination is too wet.

Common errors include underflavored milk or undiluted milk. It should be creamy but not thick so that thinness of the chhena discs is achieved.

Don’t press down too hard on the cooked discs otherwise the texture may suffer.
